The precipitation continued overnight adding a bit more ice to the trees, fences and power lines.  Fortunately, we did not lose power at work, and I am assuming we did not have to switch to generator power at home either.  If we did, no one from home called to let me know.  When we were out on the roads today coming back from a call, I managed to snap a few pictures of the area.  As bad as the ice can be, I can’t help but be amazed and impressed by it’s beauty.

I did receive a call from home this morning to let me know we have a new litter of rabbits.  Despite being at work, and ice storm, COVID or anything else going on, the homestead keeps moving forward, keeps progressing and keeps adding life.  We raise our rabbits for meat.  We plan their gestation and rotate the litters, with the long term plan to have some to butcher at least every other month.  If things go well, we may increase production to have some to butcher weekly.  I’ve had many people ask me how to cook rabbit, or what kind of recipes I use.  Honestly, we use rabbit the same way we do chicken.  We fry it, roast it, and use it in any dish that most use chicken.  Rabbit is a “white” meat and tends to take on the flavors it is cooked with, making it a wonderful choice for all types of dishes.  Rabbits are small and easy to handle, do not require a lot of special care or special equipment.  Since they don’t make noise and don’t need a lot of space, they are an excellent choice for the urban homesteader.  Larry didn’t like the rabbits….I was never sure why, but I enjoy raising them to sell and for our own freezers.

Getting the phone call to update me on the rabbits this morning was a wonderful reminder of just how blessed I am to share my homestead with my son and daughter-in-law.  They take care of the animals while I am gone, so I don’t have to worry if I have to work long hours and extra shifts.  My extra hours right now fund projects on the homestead, so it is a win for everyone when I pick up extra shifts.  With them taking care of things at home, and me bringing in extra funds we all win.  This thought led me to the thought of how much benefit I have reaped from doing community projects.  So….I finished up a blog post that I started months ago.  Hop over to “How to do Community Projects and Keep Your Friends” to see my thoughts on that subject.  Now I must get to sleep.  We have a pig to butcher tomorrow as soon as I get home, so I need to be rested if possible.  Hopefully, everyone will stay in tonight (there is freezing fog out there making the roads slippery) and we will not have any ambulance calls that require our attention.
